My golden rules are, only dirty spuds will do and preferably Maris Piper, once peeled cut to about the same size, part boil in quite salty water, drain and then into a hot baking tray with duck fat. 200ºC, don’t over cram and turn regularly. This will guarantee Golden, crispy, fluffy roasts every time. Happy Cooking, Chris x TIP 3 - NOTHING BEATS THE SMELL OF PINE IN THE MORNING Put real Christmas trees in your guest bedrooms. We are not sure about the fad of a roll top bath in the middle of the bedroom so when creating the ultimate bathrooms we eschewed the fad and put baths for two in. This way when room service delivers the chilled Champagne you can stay relaxing in the tub. A few years ago we started dressing Christmas trees with presents, lights and even a fairy on top in each bedroom. What a response, loved by all.
